Baked Chicken Nuggets

Ingredients

4 boneless, skinless chicken breasts
4 tablespoons melted butter
2 cups crushed club cracker crumbs
1/4 cup grated parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper

Preheat oven to 400 degrees.
Cut chicken into small nugget-sized chunks.
In a small bowl, melt the butter.
In another small bowl combine the cracker crumbs and seasonings.
To crush crackers, put in a ziploc bag and crush with a rolling pin or a drinking glass. One sleeve of crackers equaled about 2 cups crushed.
Dip the chicken pieces, one at a time, first into the melted butter, then into the cracker crumbs. Roll the chicken in the crumbs and completely coat both sides of the chicken.
Place each nugget on a greased baking sheet. Bake for 15 minutes, then flip each nugget. Bake for another 10-15 minutes until the nuggets are golden brown.

Serve with favorite dipping sauce, such as honey mustard.
